Ingredients
1MediumRed Onionthinly sliced
2cupsChopped Carrotsabout 4-5 whole carrots
2Red Pepperthinly sliced
115oz canChickpeas
1 1/4tspSalt(kosher/sea salt)
2tbspOlive Oil
3tbspGarlic Powder
2tbspGround Cumin
1tspGround Coriander
1/2tspChili Powder
1/2cupfinely chopped parsley
1/2cupfinely chopped cilantro
1/2juice of a lemon
3/4cupHummus
4-5Large Burrito sized Tortillas
Instructions
Add onion, red pepper, carrots chickpeas, salt, garlic powder, ground cumin, ground coriander, chili powder, and olive oil to a large bowl and mix.
Pour ingredients on a parchment lined cookie sheet. Spread out in a single layer. Bake at 400 F until brown at edges, about 45 min, tossing once halfway through.
Add more salt to taste and toss with lemon juice and chopped herbs.
Put the tortillas in the turned off but still warm oven for 30 seconds or until pliable so they don't break
Add mixture to tortillas with a generous spoonful of hummus and roll. Watch video for rolling instructions.
Eat right away, store in your fridge for up to 4 days, or freeze. To reheat put in microwave for 1.5 minutes.
