Rigatoni with Vodka Sauce
Rigatoni with Vodka Sauce
Servings: 4 people
Ingredients
- Salt
- 1 box Rigatoni
- 1 28oz can whole plum tomatoes
- 1 tbsp butter
- 2 shallots, minced
- 2 clove garlic
- 1/4 tsp red pepper flakes
- 1/2 cup Vodka
- 2/3 cup heavy cream
- 1 cup freshly grated parmesan cheese additional for topping
- Handful Fresh basil, torn additional for topping
Instructions
- Cook Rigatoni per the box instructions. Reserve about a cup of the cooking water.
- While pasta is cooking heat a large skillet over medium heat and melt the butter.
- Add shallots and cook, stirring occasionally, until slight soft. Add in the garlic and red pepper flakes and cook stirring for 30 seconds.
- Remove from heat then add Vodka, Tomatoes, and Salt. Return to heat and cook for about 7 minutes, stir frequently.
- Stir in the heavy cream and cook until the sauce thickens slightly. Slowly sprinkle in parmesan and basil.
- Add the pasta to the sauce and toss to combine, add some of the reserved cooking water to loosen up the pasta if needed. Season with salt to taste.
- Serve topped with parmesan and basil.
