Ingredients

  • Salt
  • 1 box Rigatoni
  • 1 28oz can whole plum tomatoes
  • 1 tbsp butter
  • 2 shallots, minced
  • 2 clove garlic
  • 1/4 tsp red pepper flakes
  • 1/2 cup Vodka
  • 2/3 cup heavy cream
  • 1 cup freshly grated parmesan cheese additional for topping
  • Handful Fresh basil, torn additional for topping

Instructions

  • Cook Rigatoni per the box instructions. Reserve about a cup of the cooking water.
  • While pasta is cooking heat a large skillet over medium heat and melt the butter.
  • Add shallots and cook, stirring occasionally, until slight soft. Add in the garlic and red pepper flakes and cook stirring for 30 seconds.
  • Remove from heat then add Vodka, Tomatoes, and Salt. Return to heat and cook for about 7 minutes, stir frequently.
  • Stir in the heavy cream and cook until the sauce thickens slightly. Slowly sprinkle in parmesan and basil.
  • Add the pasta to the sauce and toss to combine, add some of the reserved cooking water to loosen up the pasta if needed. Season with salt to taste.
  • Serve topped with parmesan and basil.
