Ingredients

  • 4 cloves garlic grated
  • 2 tbsp chili flakes
  • 1 tbsp sesame seeds
  • 2 tsp ground Sichuan pepper
  • 4 tbsp vegetable oil
  • 4 tbsp soy sauce
  • 2 tbsp dark brown sugar
  • 1.5 tbsp peanut butter (or any nut butter)
  • 2 tsp black vinegar
  • 12 oz Udon noodles (or any noodle you prefer)

Optional – garnishes

  • Bok choy
  • Crushed peanuts
  • Scallions
  • Mushrooms

Instructions

  • In a heat proof bowl mix garlic, chili flakes, Sichuan pepper, and sesame seeds.
  • Heat oil in a pan and pour it into the spice mixture. Add soy sauce, dark brown sugar, peanut butter, and black vinegar. Mix well. Sauce is now done.
  • Cook your noodles per package instructions. Drain noodles but reserve 1/2 cup of noodle water.
  • Mix sauce, noodle water, and noodles. Top with optional garnishes and serve.
